Un chanceux peut-on penser\u2026 un chanceux qui va faire de son obsession pour la p\u00e2tisserie un m\u00e9tier exclusif, absolu, pour lequel il quittera tout et tous, osant l\u2019aventure, optant pour la franchise et l\u2019inventivit\u00e9. N\u00e9 sous le doux soleil angevin, il entre vite en apprentissage, teste pour faire plaisir \u00e0 ses parents la boulangerie, la charcuterie, l\u2019\u00e9b\u00e9nisterie\u2026 mais rien n\u2019y fait, c\u2019est et ce sera toujours la p\u00e2tisserie !<\/span><\/p>\n<p>Et puis se profile un tout petit stage d\u2019une semaine chez Fauchon\u2026 court mais si intense, si \u00e9merveill\u00e9, presque une r\u00e9v\u00e9lation, <a href=\"https:\/\/typers.net\/\">Typers.net<\/a> ! Fauchon mais surtout Pierre Herm\u00e9 entre dans sa vie, devient le mod\u00e8le, le guide. \u00c0 trois reprises, son p\u00e8re lui offrira un billet de train pour Paris car pour ce p\u00e8re attach\u00e9 \u00e0 l\u2019\u00e9panouissement de son fils, un r\u00eave est fait pour \u00eatre accompli. Pierre Herm\u00e9 finit par lui t\u00e9l\u00e9phoner pour qu\u2019il rejoigne son \u00e9quipe chez Fauchon. Il d\u00e9barque \u00e0 Paris, choqu\u00e9 par le bruit, le rythme mais son r\u00eave le taraude et l\u2019aide \u00e0 surmonter les difficult\u00e9s. Olivier apprend tous les postes de cette fabuleuse \u00e9cole o\u00f9 Pierre Herm\u00e9 veut que tout soit qualit\u00e9, innovation, cr\u00e9ativit\u00e9. Une \u00e9quipe de 65 personnes with <a style=\"color: inherit !important; text-decoration: none;\" href=\"https:\/\/www.professorshouse.com\/spring-cleaning-tasks-you-shouldnt-forget-to-do\/\">helpful hints<\/a>, un anglais approximatif, aucune emb\u00fbche ne le fera changer de cap : r\u00e9pondre chaque jour aux exigences d\u2019Harrods, le service des clients, l\u2019organisation des cocktails, l\u2019approvisionnement des diff\u00e9rents secteurs alimentaires\u2026 Mais aussi faire le budget annuel, manager les \u00e9quipes, remplir ses objectifs et rationnaliser la production. Et c\u2019est bien cette rationalisation au-del\u00e0 de toute gourmandise, de tout nouveau challenge technique, qui va, 3 ans plus tard, le faire bouger dans le groupe Holder qui le recrute pour initier Paul<\/p>\n<p>Prestige \u00e0 Lille puis pour diriger la Recherche &amp; D\u00e9veloppement du groupe, modifier les modes de fabrication, industrialiser certains process, faire de la recherche sur les taux de sucre, les cuissons\u2026 La curiosit\u00e9 reprend le dessus, le go\u00fbt des voyages aussi et le voil\u00e0 quelques ann\u00e9es plus tard chez Bellouet Conseil pour qui il organise des d\u00e9monstrations dans le monde entier, travaille pour des industriels, conseille sur le management en anglais\u2026 et rencontre Emanuel Ryon !
